Expected Employment Outcome Example

Students who have completed the Certificate III in Food Processing - Retail Baking (Combined stream) will be eligible to take up apprenticeships or traineeships as pastry cooks, bread bakers or both in international hotels, catering institutions, hotbread shops, supermarket bakeries, artisan bakeries, restaurants, cafes, plant bakeries (Tip-Top, Buttercup), bread and cake franchises (Brumby's, Bakers Delight & Cheese Cake Shop) and hospitals.

Note: Completion of a TAFE SA course does not guarantee an employment outcome. Formal requirements other than educational qualifications (eg licensing, professional registration), may apply to some occupations.

Application Selection

Award Courses - SATAC application process

  • Applications for 2008 - Semester One must be made through the centralised TAFE Admissions system via SATAC (South Australian Tertiary Admissions Centre) by the advertised date.
  • Applicants can make one application for up to six course preferences.
  • Applications for Places Available courses are made direct to the relevant campus and a separate application is required for each course an applicant wants to study.

Certificate III in Commercial Cookery or Bakery graduates are especially encouraged to apply.

Skills Covered

  • Certificate IV in Hospitality (Patisserie)
    Preparing and displaying petits fours; preparing and displaying sweet buffet show pieces; preparing and modelling marzipan; preparing and presenting gateaux; preparing bakery products for patisserie; planning and monitoring catering revenue and costs; preparing chocolate; and preparing tortes and cakes.

Minimum Entry Requirements

  • Satisfactory completion of SACE Stage 2 (or equivalent)
  • Any Certificate II in same area
  • Any Certificate III
  • Satisfactory achievement in the TAFE SA Assessment of Basic Skills (TABS)

Qualification/Certification

Successful completion of this course provides you with Certificate IV in Hospitality (Patisserie). Students who elect to only do a certain number of modules within this Qualification will receive a Statement of Attainment.

Fees

Charges vary between courses and subjects and are based on a rate per hour. Concessions may be available to holders of certain government concession cards, and in some circumstances fees may be paid by instalment. A brochure detailing the refund of fees policy is available at each campus. The standard TAFE SA fee for State Government-subsidised courses undertaken by students enrolled in two consecutive semesters is capped at $1980 in 2008. This fee cap does not apply to all courses.

Students are generally expected to purchase their own textbooks, personal equipment, uniforms and stationery.
